I contemplated calling this stuff ‘Mojito Sauce’ or ‘Mojito Dressing’ for reasons that will be very obvious to you once you try it. Need I say more? Probably not but I will for SEO purposes (ha, don’t you love transparency?)!

This dressing is fresh, tropical and takes like 1 minute to make. 4 simple ingredients. That’s it. Ahhmazing!

It’s great as a salad dressing or a flavour booster for a good old fashioned salad wrap. If your coconut yoghurt is thick enough you can even use it as a dip. Heck, you could even chuck a shot of white rum in it and turn it into an actual mojito! Wait, please don’t do that, I take it back.

Really, the very best way to have this dressing is drizzled on top of these Vegan Chickpea Kofta Tacos. One of my all time fave meals so far.

Coconut Mint Dressing

Tastes like a mojito!

Servings: 1 cup
Ingredients
  • 1 cup coconut yoghurt
  • 1 tbsp maple syrup
  • juice of 1 lime (1 tbsp)
  • 20-30 mint leaves
  • pinch fine sale (optional - I find it balances out the flavours just perfectly)
Instructions
  1. Add all ingredients to a small single-serve blender and whiz for 30 seconds!
