Raw, vegan, fudgy and Christmassy!

Ingredients
Truffle Ingredients
  • 1/3 cup roughly chopped Medjool dates (or regular dates *see note)
  • 1/4 cup almond meal
  • 3 tbsp cashew butter (or any nut butter **see note)
  • 1/3 cup cacao powder (or cocoa, just note they will no longer be raw)
  • 3 tbsp date syrup
  • 1 tsp vanilla extract
For Rolling
  • 2 tbsp goji berries roughly chopped
  • 2 tbsp pumpkin seeds (pepitas) roughly chopped
  • 2 tbsp dessicated coconut
Instructions
  1. Add all the truffle ingredients to a food processor and process for a minute or two until a crumbly dough forms.

  2. Place each of the 'For Rolling' ingredients into small, separate bowls.

  3. Roll heaped teaspoonfuls of the mixture into balls and then roll them into the festive-coloured superfoods.

  4. Store in the fridge. Can be served chilled or at room temperature depending on your preference. Too easy!

Recipe Notes

*You can use regular dates if they are pre-soaked for at least an hour in warm water to soften them.

**Cashew butter is my preference for this recipe as it has the most neutral flavour and allows the chocolate to shine, but almond butter is also nice, and if you dig the old PB + Choc thing - go for peanut butter! Even tahini works for a sesame twist ;)
